Jennifer Connor, a Wisconsin native and UW Madison alumna, acquired the recipes for her now-famous “Mustard Girl” line from an artisan mustard maker in Madison, WI and now carries on the proud tradition. After just one taste, it’s clear that the base recipe for this mustard is a good one. Tangy (due in large part to the citric acid and vinegar) and mild on the front end, this mustard will offer a sweet and delicious addition to many German sausages—any hint of spice is short-lived but the almost smoky quality in the finish is a welcome surprise. Silver Spring Foods has its roots, literally, in the mustard business dating back more than 75 years. The secret to this “addictively spicy” blend of mustard is the fresh horseradish (still grown by the Huntsinger family in Eau Claire, WI). When you first put this mustard on your brat you quickly notice the strong scent of fresh horseradish, almost enough to make your eyes water. Definitely a mustard you will want to use in moderation in the beginning although its addictive qualities will have you coming back for more. It is clear to see why this mustard is a four-time Napa Valley Mustard Festival Gold Medal Winner.
